kcalWe set out to make a Frappuccino at home just like Starbucks without any of their syrups. A healthy version, even though we don’t use that word around here. We discovered that Starbucks has two secret weapons to get that perfect Frappuccino texture: Vitamix blenders and xanthan gum. Both come with a bit of sticker shock, but last a long time and are necessary. Making it dairy-free is easy, just pick your milk of choice. The canned coconut milk makes it extra creamy. And the pitted dates makes it extra sweet without any added sugar. Legendary American television writer and producer Norman Lear loved to say the following about coffee: โI went to bed every night excited about the coffee I was going to have in the morning.โ These Frappuccinos, for us, do just that.
Ingredients
ยฝ cup strong coffee, chilled
ยฝ cup milk of choice
1 tablespoon canned coconut milk
1 teaspoon vanilla extract
โ teaspoon xanthan gum
Pinch of salt
2 pitted dates, or to taste
1 heaping cup ice
- For Mocha Variation
1 tablespoon cocoa powder
- For Coconut Variation
ยฝ cup coconut (toasted or untoasted)
Additional sweetener to taste if using unsweetened coconut
- For Green Tea Variation
1 tablespoon matcha powder
- For Pumpkin Spice Variation
1 tablespoon pumpkin spice
- For Protein Variation
1 scoop protein powder
Omit dates to taste if using sweetened protein powder
Directions
- Place all ingredients in a high-powered blender in the order listed.
- Blend on highest speed for 30 seconds or until smooth and frothy.
- Pour into a tall glass, serve, and enjoy.

How do you make the cold brew coffee? I donโt have a coffee machine or anything fancy! I have the vitamix though!
Just brew your coffee the way you usually do, make it stronger by using more coffee in the same amount of water. After itโs brewed, put it on the refrigerator and when itโs cold you have poor mans cold brew coffee.
Try a press or just buy a bottle from the grocery store. Little pricy but cuts down on time. Or a cheap 40 dollar espresso machine or even cheaper basic coffee pot. The mr coffee espresso is cheap and strong
This was awesome… I did use a little too much Xanthan Gum, but it was still amazing. I went the Coconut and Cocoa with Stevia for sweetness (I have no dates – Still single)
This is delicious!! I was looking for a vegan Frappuccino recipe that didnโt use sugar and used a vitamix, and this was perfect! I didnโt have xanthan gum, but it still worked, just separates. Thank you for creating this recipe!!
