Ingredients
2 lbs (900 g) tomatillos, peeled
1 whole red onion (about 200 g)
6-8 cloves fresh garlic
2 whole jalapeรฑo peppers
1 can (7.5 oz or 213 g) chipotle peppers in adobo sauce
1 cup (60 g) fresh cilantro, stemmed
Juice of 1 lime
Salt to taste
Directions
- Bring a large pot of water to boil.
- Remove papery skin from tomatillos, wash them along with jalapeรฑos.
- Simmer tomatillos and jalapeรฑos in boiling water for 10 minutes.
- Drain and rinse with cold water. Let cool for 10 minutes.
- Core tomatillos and remove stems from jalapeรฑos (leave seeds for extra heat).
- Quarter the onion, peel garlic, and stem cilantro.
- Add all ingredients to a high-performance blender.
- Pulse 10-15 times to desired consistency.
- Taste and add lime juice and salt if desired.
- Pulse 2-3 more times to incorporate.
Notes
- Don’t skip boiling the tomatillos as it enhances their flavor.
- Adjust spiciness by controlling the amount of jalapeรฑo seeds and chipotle peppers.
- For a smoother consistency, blend instead of pulse.
