Directions

- Heat a non-stick skillet or griddle over medium heat. Lightly grease with a small amount of oil or cooking spray if needed.
- For each pancake, pour about 1/4 cup of the batter onto the hot surface. Cook until bubbles start to form on the surface and the edges look dry, about 2-3 minutes.
- Flip the pancakes and cook for another 1-2 minutes until cooked through.
- Repeat with the remaining batter, greasing the surface as needed.

I have just bought a Vitamix and made these pancakes but the batter was thick and the pancakes would not cook. I added more milk to thin out the batter but still wouldnโt cook through. I added two eggs in place of the aqua faba as the viewer above. That is the only change I made. The batter smelled good though!not sure what happened.
Made these this morning, and packed them up for my roomies with raspberries and maple syrup. They were DE-licious! Can’t wait to make them again.
