kcalYou can put carrots into a blender for a whole-food juice. You just need to invite several other ingredients to the party. Brighten it up with lemon and ginger. Add water and ice to make it less thick. And if you like it sweet, add some pineapple. All together, you get the best Vitamix blender carrot juice. This juice blend is quite refreshing, is nutrient-rich, and because you retain all the fiber, it produces much less waste than a slow juicer. Use it as a morning energizer or midday refresher. It’s named invigorating citrus carrot juice for a reason.
Ingredients
1 1/2 cups (354 ml) water
3 cups (675 g) pineapple, peeled and cut into chunks
1 1/2 cups (180 g) baby carrots
1 (1/4-inch thick) slice lemon, peel on
2 1/2 cups (325 g) ice cubes
1 Tablespoon (6 g) fresh ginger, peeled (optional)
Directions
- Add the water to your high-performance blender, followed by the pineapple chunks, baby carrots, lemon slice, ice cubes, and ginger (if using).
- Blend on high speed for 60 seconds until smooth.
- Pour into glasses and serve cold.

Notes
- For a smoother texture, blend the ingredients without the ice cubes first, then add the ice and blend again briefly.
- Adjust the amount of ginger to taste preference.
- You can use frozen pineapple chunks instead of fresh if desired.
