Ingredients
1 cup (240 ml) milk of choice
½ teaspoon vanilla extract
1 Tablespoon coconut oil
¼ whole lemon, with rind
¾ cup (120 g) cornmeal
½ cup (50 g) almond flour
1 Tablespoon coconut sugar
2 teaspoons baking powder
¼ teaspoon salt
1 Tablespoon poppy seeds
Directions
- Prepare Cornmeal (if using popcorn kernels)
- Add ¾ cup popcorn kernels to the blender container.
- Blend on high speed for 60 seconds until a fine cornmeal texture is achieved.
- Make Waffle Batter
- Add all ingredients (except poppy seeds) to the blender container.
- Start blending at low speed (variable speed 1) and gradually increase to high speed (variable speed 10).
- Blend on high for 45 seconds.
- Add poppy seeds to the container.
- Pulse a few times until poppy seeds are just incorporated.
- Cook Waffles
- Preheat and grease waffle maker.
- Pour ½ cup of batter into the preheated waffle maker.
- Cook according to your waffle maker’s instructions until golden and crisp.
- Repeat with remaining batter.
Notes
The batter should be slightly thick. If it’s too thick to pour easily, add a little more milk.- This recipe makes about 3 waffles, which serves 2 people (1½ waffles per person). Double the recipe for 4 people.
- These waffles have a heartier texture due to the cornmeal, which creates a crispy exterior and a tender interior.
- Fresh cornmeal made from popcorn kernels gives the waffles a fresher taste, but store-bought cornmeal works well too.
